Reflections



On this Lenten morning I sit down to reflect


And search my heart for its true aspect.



I think about my Savior preparing to die


40 days of temptation endured for me, why?



His love ever flowing, His love undeserved,


Yet my heart sometimes struggles for His Word to be heard.



So in these weeks of reflection that we call Lent,


I want to draw closer to God’s Son who he sent.



Because nothing is more important than living today

Reflecting Christ’s love in my own special way.

Here's Mary's Recipe for Chicken & Dumplings:
Ingredients: one rotisserie chicken; two tubes of plain biscuits (not flaky or buttery) but the small old fashioned ones; frozen peas; pre-chopped carrots; two small cans of cream of celery soup; two small cans of chicken stock.

Directions: Preheat oven to 350 degrees.
Shred chicken and place in the bottom of a casserole dish. Microwave the peas and carrots to tender and place on top of chicken. In saucepan on top of stove, mix the soup and stock plus two tablespoons of flour. Once its warmed up and combined, pour on top of the chicken and veggies. Then top with the biscuits and cover with lid or aluminum foil. Bake covered for 15 minutes. Then remove cover and bake another 15 minutes. Biscuits will not be brown but should still be cooked through. Serve over mashed potatoes and enjoy.
